White Chili
White Chili is an moderately easy dinner. Made with 1 lb. large white beans, soaked overnight, then drained, 6 c. chicken broth, 2 cloves minced garlic, 2 medium onions, chopped (divided) and 2 tbsp. oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook beans, broth, garlic and half the onions in a large soup pot.
Bring to boil and reduce heat.
Simmer 2 hours.
Saute remaining onions in oil in a skillet until tender.
Add chilies and seasonings and mix thoroughly.
Add mixture to beans and simmer another 1/2 hour.
Serve topped with grated cheese and cornbread on the side.
