White Chili
White Chili is an impressive dinner. Made with 2 medium onions, chopped, 1 tbsp. olive oil, 4 cloves garlic, 2 (4 oz.) cans chopped green chilies and 2 tsp. ground cumin, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook chicken in 6 cups water (I usually add 2 chicken bouillon cubes for more flavor).
Cool and debone.
Cook onion in olive oil until tender.
Add garlic, green chilies, cumin, oregano and cayenne pepper and saute.
Mix the mixture with beans, chicken stock, chopped chicken and Monterey Jack cheese.
Add salt and pepper to taste.
Serve with sour cream.
