White Bean Soup
White Bean Soup is an moderately easy dinner. Made with 1 tbsp. canola oil or olive oil, 1 1/2 c. chopped onion, 5 cloves garlic, minced, 1 3/4 c. (one 14 1/2 oz. can) fat-free chicken broth and 3 c. (two 15 oz. cans) great northern white beans, drained, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Heat oil in a large, heavy saucepan.
Saute onion and garlic until onion is tender.
Add chicken broth, beans, salt, Italian seasoning, basil and pepper.
Bring to a boil; simmer over low heat for 10 minutes.
PurΓ©e in blender until smooth; return to saucepan. Slowly stir in evaporated milk; heat through.
Top with fresh basil.
Yield
About 4 cups.
