Wheatberry Salad
Wheatberry Salad is an moderately easy dinner. Made with 1 1/2 c. uncooked wheat, 12 oz. cool whip, 2 small pkg. dry vanilla pudding, 8 oz. cream cheese and 15 oz. can crushed pineapple, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook wheat in water until soft (1 to 2 hours).
Drain and cool. Combine cheese and pudding.
Stir in drained pineapple.
Add enough juice only to thicken pudding batter.
Fold in Cool Whip, nuts and wheat.
Chill.
Makes a large amount.
