Weekend Brunch
Weekend Brunch is an moderately easy dinner. Made with 1 lb. bacon, cut in 1-inch pieces, 1 c. finely chopped onion, 3 tbsp. margarine or butter, 1/4 c. flour and 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Fry bacon on medium heat until crisp; drain.
Remove bacon and drippings.
In same pan, cook onion in butter on medium heat for 5 minutes.
Stir in flour and pepper.
Gradually add milk and cook, stirring, until thick.
Stir in cheese, bacon, rice and zucchini. Pour into lightly greased 12 x 8-inch baking dish.
Sprinkle paprika on top.
Cover and bake at 375Β° for 20 minutes.
Remove cover and bake 10 more minutes.
