Virginia Apple Cake
Virginia Apple Cake is an moderately easy dinner. Made with 1 c. salad oil, 2 c. sugar, 2 eggs (large), 3 c. chopped virginia apples and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix oil with sugar in electric mixer until well mixed.
Add eggs, one at a time, beating well after each addition.
Sift flour, cinnamon, nutmeg, baking soda and salt.
Add vanilla and mix well. Slowly add the sifted flour mixture.
Add the apples, nuts and raisins.
Pour batter into a tube pan and bake at 325Β° for 1 1/2 to 2 hours.
