Veggie Veggie Chili
Veggie Veggie Chili is an impressive dinner. Made with 1 can kidney beans, 1 can pinto beans, 1 can black beans, 1 can chic peas and 1 green pepper, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a large pot, saute onions, garlic, celery, peppers and mushrooms in olive oil.
Add chopped jalapeño, chili powder, Tabasco and beer.
Simmer about 15 minutes.
Rinse all beans.
Add to the pot.
Stir to combine everything.
Add the rest of the ingredients and simmer 1 hour.
Serve with rice.
Make this for a large group.
It can be frozen.
