Vegetarian Supper is an moderately easy dinner. Made with 1 c. uncooked rice, 1/2 c. chopped onion, 2 minced garlic cloves, 2 tbsp. oil and 1 c. chopped coarsely zucchini, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook rice; use package directions.
In large skillet, saute onion and garlic in oil until tender.
Add zucchini, green onion, pepper, oregano and salt.
Cook until crisp and tender, about 5 minutes.
Add tomatoes and beans; cover and heat through.
Serve on hot rice and sprinkle with cheese.
Serves 7.
