Vegetable Stuffed Shells
Vegetable Stuffed Shells is an moderately easy dinner. Made with 2 tsp. margarine, 1/2 c. chopped onion, 1/2 c. shredded carrots, 1 pkg. chopped spinach, cooked and 1/4 tsp. basil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350Β°.
Spray 8-inch baking pan with nonstick cooking spray.
In large skillet, melt butter (margarine); add onion.
Cook over medium for 5 minutes.
Add carrots, spinach and basil.
Cook another 3 minutes.
Remove from heat and add 1 cup Ricotta cheese.
Stuff into shells.
Put in baking dish.
Cover with sauce and cheese.
Bake 15 minutes or until heated through.
