Vegetable Strata
Vegetable Strata is an moderately easy dinner. Made with 2 eggs, 2 egg whites, 2 c. low-fat milk, 1/2 tsp. dried basil and 1/4 tsp. crushed red pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Whisk together eggs, egg whites, milk, basil and pepper.
Dip bread slices in egg mixture and arrange, overlapping, in lightly greased 13 x 9 x 2-inch baking dish.
Add vegetables to remaining egg mixture with cheese and onion.
Mix well; pour over bread. Bake about 40 minutes at 350Β°.
Ten minutes before finished baking, spoon on tomato sauce.
Serves 8.
