Vegetable Soup
Vegetable Soup is an moderately easy dinner. Made with 1/4 c. fat or vegetable oil, 2 onions, 1 c. canned or cooked meat (beef or venison), 2 c. tomatoes and 1/2 c. rice, not cooked, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Put fat in large boiler; let melt.
Peel and chop onions.
Cook in hot fat until tender.
Stir as they cook.
Take off heat.
Cut meat into small pieces; add to fat and onions with tomatoes.
Add uncooked rice, vegetables, water, salt and pepper.
Return boiler to heat.
Stir as it begins to boil, then cover with lid.
Turn heat to low.
Cook for 30 minutes.
Stir occasionally as it cooks to keep from sticking.
