Vegetable Rice
Vegetable Rice is an moderately easy dinner. Made with 1 small zucchini, 1 small eggplant, 1 small yellow squash, 1 small tomato and 1 green pepper, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Chop the first five vegetables into small pieces.
Heat 2 tablespoons of canola oil in pan.
Add and cook the onion and garlic for a minute.
Add rice, skimmed chicken broth, bay leaf and salt and pepper.
Bring to a boil. Cover and let simmer for 17 minutes.
Remove bay leaf and serve.
