Vegetable Quiche
Vegetable Quiche is an moderately easy dinner. Made with 1 1/2 c. cooked rice, at room temperature, 3/4 c. egg substitute, divided (real egg may be used), 3/4 c. shredded low-fat mozzarella cheese, divided, 1 1/2 c. chopped fresh broccoli and 3/4 c. sliced fresh mushrooms, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a bowl, combine rice, 1/4 cup egg substitute and half of the cheese; mix well.
Pat into the bottom and up the sides of a 9-inch pie plate coated with nonstick cooking spray.
Set aside.
