Vegetable Quiche
Vegetable Quiche is an moderately easy dinner. Made with 1 c. sliced zucchini, 1 c. chopped onions, 2 garlic cloves, 1 sliced tomato and 1 c. cottage cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute onions, zucchini and garlic in margarine or oil. Prebake 1 pie crust until slightly cooked.
Mix together cheese, eggs, milk and dash of Tabasco sauce.
Add sauteed vegetables to egg mixture.
Pour into crust.
Bake at about 350Β° until set, about 45 to 60 minutes.
Sprinkle Parmesan cheese on top after it is baked.
