Vegetable Quiche
Vegetable Quiche is an moderately easy dinner. Made with 1 medium size zucchini, cut in chunks (unpeeled), 1 each: medium size carrot, onion, green pepper, celery and radish (if desired), 1 (8 oz.) pkg. philadelphia cream cheese, 2 eggs and 1 1/2 c. milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Pour the creamed mixture into a large bowl and add the drained vegetables.
Mix lightly and add 3/4 teaspoon Italian seasoning or other if preferred.
Gently toss in 1 cup grated Cheddar cheese. Batter should be consistency of a cake batter.
If too thin, add more Bisquick before folding in the grated cheese.
Other cheeses may be used if desired.
Pour batter into a large well-greased baking dish.
Sprinkle with paprika and parsley flakes.
Bake at 350Β° for about 35 to 40 minutes.
This freezes very good.
