Vegetable Potato Salad
Vegetable Potato Salad is an impressive dinner. Made with 6 medium potatoes, peeled and cut into 1/2-inch cubes, 1 c. grated carrots, 1/2 c. finely chopped celery, 3 hard-cooked eggs and 1 c. sweet pickle relish, this recipe delivers authentic, satisfying flavors. Place potatoes in boiling water and cook until tender, 10 minutes or so.
Drain well.
Combine all other ingredients, except paprika, in a large mixing bowl.
