Vegetable Lasagna
Vegetable Lasagna is an impressive dinner. Made with 1 (10 oz.) box frozen spinach, 1 c. grated carrot, 1 medium onion, chopped, 1/2 c. sliced black olives and 1 c. sliced mushrooms, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine vegetables and garlic with tomato sauce.
Combine eggs, cottage cheese, spices and grated Mozzarella cheese.
Wet lasagna noodles with hot water and layer in a 9 x 13-inch pan.
Layer veggie sauce and cottage cheese mixture over noodles until the mixtures are gone.
Sprinkle with Parmesan cheese.
Cover and cook 45 minutes at 375Β°.
Uncover and cook 15 minutes longer.
