Vegetable Lasagna
Vegetable Lasagna is an moderately easy dinner. Made with 6 lasagna noodles, 1 c. chopped onion, 1 c. sliced mushrooms, 3 cloves garlic and 2 tbsp. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook noodles according to package directions.
Saute onion, mushrooms and garlic for 1 minute. Add water.
Cover and cook 3 to 4 minutes. Combine cheese, carrots, spinach, eggs and Parmesan cheese. Layer noodles, 1/2 sauce, 1/2 sauteed vegetables and 1/2 cheese mixture. Repeat and top with Mozzarella. Bake at 350Β° for 30 to 35 minutes. Cool 10 minutes before cutting.
