Vegetable Juice
Vegetable Juice is an moderately easy dinner. Made with 10 lb. tomatoes (put in hot boiling water and skin as in making tomato juice), 1 c. chopped celery, 1 chopped green pepper, 5 chopped onions and parsley flakes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Chop celery, green pepper and onions.
Cook these in a pressure cooker in 1 pint of water for 5 minutes.
When finished, run through blender to make pulp.
Add this and other ingredients to tomatoes.
Bring to a rolling boil and then put in jars. Process 10 minutes on number 5 pressure in pressure canner.
