Vegetable Chilli is an moderately easy dinner. Made with 1 tbsp. oil, 1 large onion, chopped, 1 (28 oz.) can whole tomatoes, drained and chopped, 2/3 c. picante sauce (mild) and 1 1/2 tsp. cumin, this recipe delivers authentic, satisfying flavors. Heat oil.
Add onion and saute for 2 to 3 minutes.
Add tomatoes, picante sauce, chili powder, cumin and salt.
Cover and cook or simmer for 10 minutes.
Add beans, pepper, corn and zucchini.
Cover and simmer for 15 to 20 minutes or until zucchini is tender.
