Vanilla Granola
Vanilla Granola is an moderately easy dinner. Made with 2 c. old fashioned oats, 1/3 c. frozen apple juice concentrate, thawed, 2 tbsp. light brown sugar, 1 tbsp. ground cinnamon and 1 c. unsweetened flaked coconut (this is where the fat is), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat the oven to 300Β°.
In a large bowl, place the first 4 ingredients; toss well.
Spread the granola onto a large cookie sheet; bake for 25 minutes, stirring occasionally.
Stir in the coconut and vanilla seed.
Bake for another 20 to 25 minutes, until lightly browned.
Stir in the cherries and raisins.
Cool and store in an airtight container for up to 1 month.
Serves 10.
