Two-Corn Casserole
Two-Corn Casserole is an moderately easy dinner. Made with 1 can whole kernel corn with liquid, 1 can creamed corn, 1 (8 1/2 oz.) pkg. corn muffin mix, 3 eggs, lightly beaten and 1 small onion, chopped fine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Melt stick of butter.
Saute onion; set aside to cool.
In large bowl, combine both corns, corn muffin mix and 3 eggs.
Add cooled onion mixture; mix well.
Place in a casserole that has been sprayed with nonstick spray.
Top with shredded Cheddar cheese.
Bake at 350Β° for 1 hour.
