Slice Twinkies lengthwise and place into a 9 x 13-inch pan. Mix jello with 1 cup boiling water.
Add pineapple, 7-Up and ice cream in bowl; stir until ice cream melts.
Pour over Twinkies. Chill in refrigerator for at least 1 hour.
Top with Cool Whip.
