Made with 1/2 c. cooking oil, 3/4 c. sugar, 1/2 c. mashed ripe bananas (1 to 1 1/2 medium), 1/2 tsp. almond extract and 1 (11 oz.) can mandarin oranges, drained, this recipe delivers authentic, satisfying flavors. Blend together oil and sugar in large mixing bowl.

Add eggs, one at a time, beating well after each.

Stir in bananas and almond extract.

Cut oranges into pieces and add to banana mixture.

Stir in remaining ingredients except graham cracker crumbs.

Mix well. Grease bottom and sides of an 8 x 4-inch or 9 x 5-inch (1 1/2-quart) loaf pan.

Sprinkle with graham cracker crumbs.

Shake out excess.

Pour batter into pan, spreading evenly.

Bake 55 minutes at 325Β°.

Yields 1 loaf.
