Tropical Banana-Nut Cake
Tropical Banana-Nut Cake is an moderately easy dinner. Made with 2 1/2 c. sifted cake flour, 1 2/3 c. sugar, 1 1/4 tsp. double-acting baking powder, 1 tsp. baking soda and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Sift together in large bowl the flour, sugar, baking powder, baking soda and salt.
Add shortening, bananas and 1/3 cup buttermilk; stir to dampen flour.
Beat at medium speed 2 minutes with mixer or 300 hand strokes.
Add eggs, vanilla and remaining buttermilk.
Beat 2 minutes longer (or 300 more strokes).
Fold in chopped nuts.
Pour into 2 paper lined 9 x 1 1/2-inch round pans. Bake at 350Β° for 30 to 35 minutes.
Cool and frost as desired.
