Tripe Soup
Tripe Soup is an impressive dinner. Made with 1 1/2 lb. beef tripe, 1 small onion, 2 carrots, 1/4 cabbage and 1 slice pumpkin, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Wash tripe in water and vinegar.
Season tripe with salt and pepper.
Let stand for 30 minutes.
Cook in 1/2 pot water for 1 1/2 hours or pressure cook for 1/2 hour.
Add onion, cabbage, pumpkin and other vegetables; season to taste.
Add spaghetti 30 minutes before the soup is finished cooking.
If the soup is too thick, add a little water and season to taste.
