Torro d'Ocata is a Catalan-style almond nougat with honey sweetness, toasted nuts, and a firm but tender chew. The candy is cooked carefully, pressed into a slab, and sliced once cool so the almonds show cleanly through each pale bar.

Toast almonds until fragrant and keep them warm so they fold easily into the nougat.
Cook honey and sugar until thick and foamy, then slowly beat into whipped egg white with salt.
Return the mixture to low heat and stir until glossy and heavy, then fold in almonds and lemon zest.
Press between wafer paper or parchment, cool completely, and cut into neat bars.
