Tomato Soup
Tomato Soup is an moderately easy dinner. Made with 2 tbsp. olive oil, 3 large onions, 1/2 c. chopped celery, 2 to 3 garlic cloves and 1 large can (46 oz.) low sodium light 'n tangy v-8 juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onions in olive oil, add celery and saute until tender. Then add minced garlic and fresh basil, saute for about 2 minutes. Add V-8 juice, tomatoes and basil.
Simmer soup for at least 1/2 hour before serving.
