Tomato Rarebit
Tomato Rarebit is an moderately easy dinner. Made with 3/4 c. finely chopped tomatoes (about 2), 1/4 tsp. baking soda, 2 tbsp. flour, 2 tbsp. butter and 1 c. milk, heated, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine tomatoes and baking soda.
Melt butter in saucepan. Add flour.
Cook and stir 2 to 3 minutes.
Slowly pour in heated milk.
Stir until mix is smooth and thick.
Add tomatoes, cheese, eggs, mustard and cayenne.
Season with salt.
Cook over low heat. Stir until cheese melts and mix is smooth.
Serve over toast.
May easily be doubled.
Serves 4.
