Tomato Pie
Tomato Pie is an moderately easy dinner. Made with 4 large, ripe tomatoes or enough to fill crust, 1 (9-inch) prebaked pie crust, salt and pepper to taste, 1 c. mayonnaise and 1 c. grated sharp cheddar cheese, this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Peel and seed the tomatoes and slice 3/4-inch thick.
Put enough tomatoes in the crust to fill, but don't overflow.
Season with salt and pepper to taste.
Mix together the mayonnaise, cheese, chives and basil, seasoning with salt and pepper to taste; spread over the tomatoes.
Bake for about 20 minutes or until the topping turns golden brown and pie is bubbling.
Cool slightly before serving.
