Tofu Spinach Quiche
Tofu Spinach Quiche is an moderately easy dinner. Made with 1 lb. soft tofu, drained, 3 eggs, 1 tsp. salt, 1/2 tsp. nutmeg and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 350Β°.
Cook spinach in a small amount of water only long enough to thaw; drain well.
Place eggs, salt, pepper and nutmeg in blender.
While blender is on, drop tofu in 1/4 pound at a time.
Blend until smooth.
Combine tofu-egg mixture with spinach and minced onions in a bowl.
Mix thoroughly.
Pour into unbaked pie shell and cover with grated cheese.
Bake for 30 minutes.
