Tofu Pie
Tofu Pie is an moderately easy dinner. Made with 1 block soft tofu, drained, 1 (6 oz.) box lemon jello, 2 c. boiling water, 2 tbsp. lemon juice and 1 to 2 tbsp. lemon extract, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Drain tofu; mash and mix in a small bowl and set aside.
In a larger bowl, mix together jello, lemon juice and lemon extract. Add tofu and blend well.
Chill until slightly gelled and fold in 8 ounces Cool Whip.
Pour into pie shells and chill well.
Using the other 8 ounces of Cool Whip, top the tofu pies.
