Tiramisu
Tiramisu is an moderately easy dinner. Made with 1 (3 oz.) pkg. ladyfingers, split lengthwise, 4 c. low-fat ricotta cheese, 1 (8 oz.) pkg. light cream cheese, softened, 5 tsp. instant espresso powder and 2 tsp. vanilla extract, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Line bottom and sides of 9-inch spring-form pan with ladyfingers.
In large bowl, combine Ricotta cheese, cream cheese, sugar, Espresso powder, vanilla and 3 teaspoons cocoa powder. Beat at medium speed with electric mixer until well blended. Carefully spoon mix into prepared pan.
Refrigerate at least 3 hours or overnight.
