In a large bowl, put the first 3 ingredients and set aside. Heat together the skim milk, honey, Canola oil, sugar and salt in a large pan and warm to lukewarm.

Then break the yeast into the liquid and mix by hand until it becomes smooth.

Pour this mixture into the flour in the large bowl.

Gradually add the remaining 2 1/4 to 2 1/2 cups flour, just enough to make a moderately stiff dough.

Turn onto a floured surface and knead until smooth.

Place dough in greased bowl, turning once.

Cover; let rise once until doubled.

Form three loaves; put into greased bread pans.

Let rise to double in size.

Bake at 375Β° for 30 to 40 minutes.
