Clean fish and arrange in an 11 x 13-inch baking dish.

Layer the fillet of sole over the haddock and scatter scallops over the top.

Sprinkle the lemon pepper and a dash of milk over the top.

Slice a 6 ounce package of Velveeta cheese and lay over the top of the fish.

Combine the topping as follows

Crumble 1 1/2 rolls of Ritz crackers.

Add garlic, sage and parsley.

Toss together.
