Texas Rice
Texas Rice is an moderately easy dinner. Made with 3 tbsp. butter or margarine, 1 medium yellow onion, peeled and chopped, 1 1/2 c. uncooked rice, 1 medium green pepper, chopped and 1 tsp. chili powder, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Melt the butter in a heavy 3-quart saucepan over moderate heat.
Add the onion, and cook, uncovered, for 5 minutes, or until soft.
Stir in the rice, green pepper, chili powder, oregano, tomato juice and tomato sauce; then add the water and salt.
Stir once; cover and bring to a boil.
Reduce the heat and simmer for 20 minutes, or until the rice is tender and the liquid has been absorbed.
Makes 6 servings.
