Texas Ranch Chicken
Texas Ranch Chicken is an moderately easy dinner. Made with 4 boneless chicken breasts, 1 can cream of chicken soup, 1 1/2 c. chicken broth, 1/2 doz. tortillas, cut in 2-inch strips and 2/3 can ro-tel tomatoes and green peppers, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Microwave chicken 4 minutes.
Cut into small pieces.
Heat the soup, tomatoes and broth together.
In 2-quart casserole, place a layer of tortillas, a layer of chicken, then soup mixture and cheese.
Repeat layers.
Bake at 350° for 20 minutes (uncovered). Lower heat to 300° and bake 40 minutes.
Serves 8.
