Texas Breakfast Rellenos
Texas Breakfast Rellenos is an moderately easy dinner. Made with 1 (7 oz.) can whole green chilies, 2 c. (8 oz.) shredded monterey jack cheese with jalapeños, 2 c. (8 oz.) shredded cheddar cheese, 3 eggs (large) and 3 c. whole milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Preheat oven to 325°.
Spray 11 x 7 x 2-inch baking dish with Pam.
Split chilies and discard seeds.
Arrange chilies on bottom of baking dish and top with combined cheeses.
In a bowl, beat eggs.
Add milk and biscuit mix.
Blend well and pour over cheese. Bake at 325° for 50 to 55 minutes or until golden brown at edges. Serve with salsa.
Salt to taste.
