Tex-Mex Rice
Tex-Mex Rice is an moderately easy dinner. Made with 1 1/2 c. regular long grain rice, 1/2 c. chopped onion, 1 clove garlic, minced, 2 tbsp. vegetable oil and 2 3/4 c. chicken broth, heated, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In large saucepan over low heat, cook rice, onion and garlic in oil until the rice is lightly browned, stirring frequently. Stir in hot chicken broth, picante sauce and carrot.
Cover and simmer until all liquid is absorbed, about 20 minutes.
