Tamale Pie
Tamale Pie is an moderately easy dinner. Made with 2 lb. hamburger, 1/2 c. chopped onion, 1 c. diced celery, 1 (16 oz.) can whole kernel corn and 16 oz. (2 c.) canned tomatoes, drain and keep juice to use later, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cook hamburger until done and drain.
Add all remaining ingredients to hamburger.
Let cook until you cook your yellow cornmeal; mush.
Mix 5 cups boiling water, 1 cup tomato juice, a little cayenne pepper, and a little salt.
Add 2 cups yellow cornmeal, stirring slowly constantly until thick.
Line a 3-quart casserole dish with corn mush, it will be thick, then pour all in skillet.
Then put the rest of meal on top.
Bake, uncovered, in oven at 375Β° for 30 minutes.
Serve with grated Cheddar cheese.
