Tamale Pie
Tamale Pie is an moderately easy dinner. Made with 1/2 c. yellow cornmeal, 1 1/2 c. water, 1 1/4 tsp. salt, 1 1/2 c. evaporated milk and dash of red pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Measure cornmeal, water and salt in a heavy saucepan.
Boil until mixture begins to thicken, then add milk.
Continue cooking slowly for 8 to 10 minutes.
Stir constantly.
Brown beef in skillet; drain.
Add onion, tomatoes, pimentos and spices.
Line a baking dish with 3/4 of the cornmeal mush.
Pour beef mixture in dish.
Cover with remaining mush.
Bake at 350Β° for 30 to 45 minutes.
Serves 6.
