Tamale Loaf
Tamale Loaf is an impressive Mexican baked good you can prepare in about 1 hour 32 minutes. Made with onion, chopped, . butter, c. olive oil, (17 oz.) can corn and (28 oz.) can tomatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Brown onions in butter and oil.
Add corn, tomatoes and olives; cook 15 minutes.
Do not drain.
Add eggs, milk and meal and cook 15 minutes, stirring constantly.
Add all remaining ingredients and pour into a greased casserole.
Bake and garnish with whole ripe olives.
Yield: to 8 servings.
