Taco Soup
Taco Soup is an moderately easy dinner. Made with 2 lb. ground beef or chuck, 1 clove garlic, chopped, 1 can ro-tel tomatoes, 2 cans tomatoes, chopped and 1 can red kidney beans, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown meat, onion and garlic; drain.
Put into large pot.
Add other ingredients, liquid and all.
Cook as long as possible, the longer the better (until all is tender).
Serve with corn chips. Top with sour cream, grated cheese, lettuce, tomatoes and taco sauce if desired.
