Taco Salad
Taco Salad is an moderately easy dinner. Made with 1 1/2 lb. ground beef, 1 c. celery, diced, 1 c. bell pepper, diced, 3 cloves garlic, diced and 1 large head lettuce, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Brown meat.
Saute vegetables.
Combine the two and simmer. Season with salt, chili powder and cumin.
In top of double boiler, melt cheese.
Add Ro-Tel tomatoes.
Cut lettuce coarsely and dice tomatoes.
Put in large bowl.
Add meat and vegetables and mix lightly.
Add slightly crushed corn chips and toss.
Top with hot cheese mixture.
Serve immediately.
