Taco Salad
Taco Salad is an impressive dinner. Made with 1 small head lettuce, 3 green onions, sliced, 1/2 c. coarsely chopped green pepper, 2 medium tomatoes, chopped and 2 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Tear lettuce into bite size pieces, combine with green onions and green pepper, chill.
Prepare and chill tomatoes, cheese and olives.
Brown beef and chopped onion, spoon off fat.
Stir in salt, taco seasoning mix and corn.
Cool to a little warmer than lukewarm.
While meat mixture is cooling, cube avocado and toss with small amount of lemon juice.
When ready to serve, place 1/2 lettuce mixture in large salad bowl; layer with 1/2 the corn chips and remaining meat mixture.
Top with 1/2 each of the tomatoes, cheese, olives and avocado.
Repeat with remaining salad ingredients.
Drizzle taco sauce over salad and serve with additional taco sauce if desired.
