Tabbouleh
Tabbouleh is an moderately easy dinner. Made with 2/3 c. fine bulgur, 3 medium size tomatoes, finely chopped, 3/4 c. finely chopped fresh parsley, 1 medium size onion, finely chopped and 4 tbsp. fresh lemon juice, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Place the bulgur (crushed wheat) in bowl and cover with cold water.
Let soak for 10 minutes; then drain.
Wrap bulgur in cheesecloth and squeeze vigorously until dry.
Drop bulgur into a deep bowl; add tomatoes, parsley, onions, lemon juice and salt. Toss gently but thoroughly, mixing together with a fork.
Just before serving, stir in the olive oil and mint.
Taste for seasoning.
