Combine the first 5 ingredients and beat on low speed just until moistened.
Beat on high for 2 minutes.
Stir in coconut. Pour into 2 greased 8 x 4 x 2-inch loaf pans.
Bake at 325Β° for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
Cool 10 minutes before removing from pans to wire rack to cool completely.
