Sweet Squash Pickles
Sweet Squash Pickles is an moderately easy dinner. Made with 1 c. sliced bell peppers, 8 c. sliced yellow squash, 2 c. sliced onions, 2 tbsp. salt and 1 c. apple cider vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix first 4 ingredients and set aside for 2 hours after putting ice on top of mixture.
Mix vinegar, celery seed, sugar and turmeric in large stockpot.
Drain the mixture of peppers, squash, onions and salt.
Add the mixture to the pot.
Bring to a boil.
Add to clean, dry, warm jars and seal.
