Sweet Potato Bonbons
Sweet Potato Bonbons is an moderately easy dinner. Made with 3 lb. peeled and cooked sweet potatoes, 1/4 c. (1/2 stick) butter, 1/2 c. packed brown sugar, 1 tsp. salt and 1/2 tsp. grated orange rind, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mash sweet potatoes until light and fluffy.
Add 1/4 cup butter, brown sugar, salt and orange rind; cool.
Divide into 12 portions.
Press each portion around a marshmallow half.
Shape into a ball.
Use 1/3 cup melted butter to coat the balls.
Roll in crushed corn flakes, then top with a pecan.
Place on lightly greased pan.
Bake at 450Β° for 7 to 8 minutes.
