Sweet Corn Salsa
Sweet Corn Salsa is an moderately easy dinner. Made with 2 c. fresh corn kernels, 3 tbsp. sweet butter (cold), cut in pieces, 1/4 c. tomatoes, seeded and diced, 1 small jalapeño, seeded and minced and 2 tbsp. red onion, minced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut raw corn off cobs. Combine all ingredients in saucepan over high heat and stir while bringing salsa to a boil.
When butter has melted completely and takes on look of light butter sauce, remove from heat and serve immediately.
Makes 3 cups.
